forest honey (honeydew) is produced by bees with a tiny dark-coloured insect called metacalphus. The least sweet of all types of honey, once tasted it leaves a bitterish aftertaste, and in some cases it can recall the taste of caramel. Its main characteristic is its colour, which can vary from dark brown to black.
